What is the chemical composition of soy fabric?

Soy protein fiber consists of eighteen amino acids and is rich in protein (about 37−42% of dry beans). The protein composes of the various polypeptides that are linked by hydrogen bonds, electrostatic interactions, disulphide bonds and hydrophobic interactions. The globular proteins consist of salt-soluble globulins (90%) and water-soluble albumin.

Two storage globulins: β-conglycinin and glycinin (ca. 30% of the total seed proteins) which form the raw material for soy fibers. Also, in order to extract soy protein, the globular proteins are processed through the step of denaturation that converts them into unfolded polypeptide chains.
